Let's say you are currently doing 5 sets of 7 pullups, and arelooking to increase this to 5 sets of 8, and onwards, up to to 5 sets of 10. 5x7 is your current limit, so to get to 5x8 you need to go in steps, gradually adding one rep to each set, until you are up to 5x8.
